ImageSo this may not look the prettiest & we’ll have to work on our presentation a little better next time, but this recipe tasted pretty good!  We may have use a bit too much hot sauce, so it was pretty spicy, but all the flavors went together pretty well. Okie dokie, so with taking the spicyness into consideration, this is what we’d do in the future for this receipe…  we used about 15 medium sized shrimp, defrosted, detailed, de-veined.  We cut up a whole green pepper, one stock and bulb of fennel, about a cup and a half of asparagus, and half a cup of onion.  Add about a teaspoon of olive oil to a pan on the stove, and saute the green pepper, fennel and asparagus together, until desired tenderness.  Once cooked, set veggies aside in a bowl.  Mix together in a seperate bowl 1.5 tablespoons of hot sauce, 1.5 tablespoons of Walden Farms Orange Marmalade, 2 tablespoons of soy sauce, some garlic powder and salt a pepper… right before cooking sauce in pan, add 2 tablespoons of apple cider vinegar, mix, then pour into pan and let thicken.  Add shrimp, let cook for about 2-3 minutes until fully pink… then add onions & rest of cooked veggies.  You then serve on a bed of alfalfa sprouts…

It’s amazing that food can taste this good even when THIS healthy!  Making the right choices when it comes to food should be easy, fun, and experimental.  Mike (Dr.T) & I have have enjoyed this journey because it forces us to come out of our comfort zone by going from what we normally make, to making things we would have never even thought to have tried on our own.  Some of the veggies that are called for in these recipes are things I’ve never tasted, let along never even heard about.  Did you know raw fennel looks like celery, but tastes alot like black licorice?  Weird huh!?!  But SO MUCH FUN stimulating our taste buds!
